Ingredients: 
4 large eggs
1/2 cup water or milk
1/2 teaspoon salt
1/2 teaspoon ground black pepper
Olive oil cooking spary
3/4 cup blackberries, halved
1 cup of shredded cheese, such as white cheddar
4 tablespoons fresh basil, chopped

Yield: 
4 omelets

Directions: 

Beat eggs, milk, salt and pepper together in a large bowl. Heat an 8-inch non-stick skillet over medium-high heat. Spray pan. Pour one-fourth egg mixture into pan. When egg starts to bubble, push towards center with a spatula, and tilt pan to allow uncooked portion to run underneath. Continue around edges until eggs are set. Flip egg onto the other side. Reduce heat to low. Sprinkle half the omelet with cheese and blackberries Sprinkle with one tablespoon of basil. Fold omelet over and turn out onto plate. Repeat with remaining ingredients to make 4 omelets. Serve warm.
